The importance of cocoa in the culinary arts cannot be overstated. When it comes to sweets, the first thing people think of is chocolate. Globally, all confectionery cocoa products can be divided into two main categories: powder and butter. However, in reality, there are many more variations:

  • Natural cocoa powder. It is made from cocoa liquor without any additional processing. It is ideal for recipes where baking soda is a mandatory ingredient.
  • Alkalized cocoa powder. It uses the same raw material, but treated with alkalis. Compared to natural powder, it loses some of its nutritional value but gains a softer and richer taste. It also dissolves well even in cold water. Drinks made from this cocoa do not need to be boiled; simply add water or milk. The alkalization process also changes the color: the higher the degree, the darker the shade. Colors range from red-brown to black. The richer the color, the more economical the consumption.
  • Cocoa powder of varying fat content. High-fat powder contains 20% or more cocoa butter, reduced-fat has 10-12%, and defatted contains less than 10%.
  • Confectionery cocoa butter. It has a characteristic, rich aroma. It is impossible to make chocolate candies, figures, and sauces without it. Cocoa butter is exactly what determines the fluidity level of the finished product.
  • Deodorized cocoa butter. Through steam processing, the butter is stripped of its natural aroma. Its other properties remain exactly the same. It is used in recipes, such as creams, that do not require a chocolate scent.
