What is the Difference Between Nut Paste and Praline?

Praline contains caramelized sugar, and this is essentially the only difference. The manufacturing process is identical: roasted nuts are ground to a smooth consistency. However, for praline, the nuts are caramelized beforehand. This adds wonderful caramel notes to the finished product. Confectionery praline consists of nuts and sugar in a 1:1 ratio — meaning 50% nuts and 50% sugar.

Nut paste is made without any added sugar, with a nut content of 100%. Unsweetened paste is an ideal ingredient for diabetic sweets, especially when paired with sugar-free chocolate. Moreover, nuts are highly recommended for people with blood sugar disorders.

How to Use

  • Make a magnificent candy filling. To do this, mix nut paste or praline with chocolate in a ratio of 1 part praline to 3 parts chocolate. You will get excellent gianduja — a chocolate-nut paste.
  • Add crispy textures. Mix praline with French wafer crumbs. These crumbs can also be used for final decoration. Enhance the flavor by placing your favorite nut in the center. There is an even more refined option: use caramelized nuts. Chopped caramelized nuts will also beautifully decorate the outside of the candies.
  • Flavoring paste. Slightly heat the paste and add a small amount to cake ganache, cream, mousse, or ice cream. You will achieve a gorgeous aroma and an exquisite nutty taste.
  • A component of complex original recipes. Nut pastes and pralines are included in the recipes of many confectionery products as a base ingredient. Use them according to a recipe or create your own culinary masterpiece.
