Pectin NH Nappage (Thermo-Reversible), 250 g

Pectin NH Nappage by FARINA is an amidated fruit pectin (E440ii) for mirror glazes and jelly coatings for cakes and tartlets. The pectin is thermo-reversible: if the glaze sets too early or leftovers remain, it can be re-melted and reused without losing shine or texture.

The 250 g pack is convenient for home bakers, small cafés, and trial batches — the ideal size to test the pectin in your recipes or top up your supply without overspending.

Amidated fruit pectin E440ii, stabilizer sodium pyrophosphate E450i, dextrose, acidity regulator calcium orthophosphate E341iii.

Directions for use

Pre-mix the pectin with sugar or other powdered ingredients at a ratio of 1 part pectin to 5–8 parts sugar. Add the pectin-sugar mixture into a warm liquid (about 40–45°C), stirring constantly to avoid lumps. Then bring to a boil (or to 80–85°C) and boil for one minute to ensure activation. The mixture sets during cooling. It can be reheated and cooled again to thicken.
